New Local Cheeses

We are pleased to begin offering new artisan cheeses straight from Arethusa Farms in Litchfield, CT. Pure-bred Holsteins and Jerseys roam rolling green acres of Connecticut pasture lands, getting plenty of exercise and clean, fresh grass to ensure the highest quality milk possible, which is then handcrafted into Connecticut’s finest cheeses. Read on to learn about which styles of Arethusa’s cheeses that we have available:

Al Tavolo

Aged ten months or more, this cheese has an intricate, lightly caramel flavor with a firm, yet sweet creaminess, which is subtly complimented by its both fruity and nutty undertones. Mixed with the Cry Baby cheese, it makes the perfect combination for replacing traditional cheeses in your favorite recipes.

Camembert

Soft rind with smooth, rich and earthy tones, this cheese has a springy texture and mild flavor when young. Allowed to age longer, it will be runny with a strong, robust flavor. Pairs perfectly with a baguette or water crackers and marmalade.

Cry Baby

Styled after farmhouse cheeses typical to the Italian Alps, This cheese is firm, smooth and vaguely nutty. Developing small holes similar to lacy Swiss during the aging process, this cheese is excellent on a cheeseboard or used in recipes, such as macaroni & cheese or quiche.
